Tofu Scramble: A Flavorful Vegan Breakfast

Tofu scramble is a delicious and healthy vegan breakfast option that is perfect for those looking for a quick and easy meal.

Ingredients:

  • 1 block extra-firm tofu, pressed and crumbled
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1/2 bell pepper, chopped
  • 1/4 cup chopped spinach
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon nutritional yeast
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.  
  2. Add the spinach and cook until wilted, about 1 minute.
  3. Add the crumbled tofu, turmeric powder, nutritional yeast, salt, and pepper to the skillet. Cook, stirring occasionally, until the tofu is heated through and slightly browned, about 5 minutes.
  4. Serve immediately with your favorite toppings.

Tips:

  • For a spicier tofu scramble, add a pinch of cayenne pepper or red pepper flakes.
  • You can also add other vegetables to your tofu scramble, such as mushrooms, broccoli, or zucchini.
  • Tofu scramble can be stored in the refrigerator for up to 3 days.
